Spring Basket Cake

 
 

with Ambrosia Filling

 

Taste and health benefits of Butter, Shortening (Crisco/Spry), and Lard are still hotly debated. Aunt Pit wasn't afraid of any of them.

1/2 cup crisco [shortening]
1/4 cups sugar
2 eggs separated
grated rind 1 orange
1/2 cup orange juice
1 teaspoon lemon juice
1/4 cup water
2 1/4 cups flour
2 teaspoon B.P.[baking powder]
1/2 teaspoon salt.

blend crisco with sugar, egg yolks, orange rind
beat till fluffy
mix orange juice, lemon juice and water
add to crisco mixture alternately with sifted dry ingredients
fold in egg whites beaten stiff not dry

bake in oblong loaf pan 8 x 4 x 2 1/2 in moderate oven 1 h 15 min.

when cool hollow out cake to make a shallow basket

save crumbs for ambrosia filling

add 3 tablespoons sugar
2 3/4 cup heavy cream

beat till stiff

mix in 3/4 cup cake crumbs
1/l8 teaspoon salt
1 teaspoon lemon juice
add 1 orange cup up
1/4 cup each cherries, grated pine apples

pile into hollow

chill one hr.

make handle with gum gum drops and wire

 

Coffee cream has 20% fat.
Whipping cream has 30% fat.
Heavy cream has 36% fat.
